The region boasts 4,400 hectares (10,000 acres) of vineyards, and the designation AOC Cahors is exclusively used for red wines. The Autan wind, blowing dry hot air from the south in autumn, contributes to the perfect ripening of the berries. The Lot River serves as a natural thermal regulator.

The vineyard terraces along the Lot are divided into three distinct areas, characterized by alluvial soils originating from the Central Mountain range. The lower terraces produce subtle and fruity wines, while the mid terraces yield more ample varieties. The higher terraces and Grèzes areas, composed of limestone blocks from the Causse plateau, produce richer Cahors wines suitable for aging. Beyond 300 meters altitude, on the less fertile limestone plateau, wines are less full-bodied but possess great finesse.
